I have been growing in parks for at least 30 months. My transformation takes place during the maturing phase when I am placed in carefully selected "claires" for a minimum of 21 days.
A small blue algae are present in the water, and when I filter them, they colour my gills. This miracle of nature changes my colour and makes me unique.
This unique maturing technique gives me an attractive colour and lively aromas at the tasting. I am a surprise for all oyster lovers with a crunchy flesh sublimated by iodine notes. I am meaty and strong.
